Healthy, heart warming, homemade, vegan soup!

Ingredients
- 1-1/2 cups yellow split peas, dry
- 7 cups water
- 1 tablespoon Vegetable broth flavoring
- 1/2 teaspoon salt
- 1/2 teaspoon lemon pepper
- 1-1/2 teaspoons dried basil
- 1 bay leaf
- 2 teaspoons lemon juice
- 1 cup cubed raw potato
- 1/2 cup diced carrot
- 1/2 cup diced celery
- 1 tablespoon minced dried onion
- 2 garlic cloves, minced
- 1 cup frozen peas
Directions
- Mix all ingredients except peas together in a soup pot and simmer uncovered for about 45 minutes. Just before serving, stir in frozen peas and cook for another couple of minutes or so. You may also add a little olive oil if desired, but you must count it separately — I did not include it in the nutrition ingredients. Makes 8 servings, 1 cup each.
