Yellow Split Pea and Vegetable Soup

Ingredients

  • 1-1/2 cups yellow split peas, dry
  • 7 cups water
  • 1 tablespoon Vegetable broth flavoring
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon pepper
  • 1-1/2 teaspoons dried basil
  • 1 bay leaf
  • 2 teaspoons lemon juice
  • 1 cup cubed raw potato
  • 1/2 cup diced carrot
  • 1/2 cup diced celery
  • 1 tablespoon minced dried onion
  • 2 garlic cloves, minced
  • 1 cup frozen peas

Directions

  • Mix all ingredients except peas together in a soup pot and simmer uncovered for about 45 minutes. Just before serving, stir in frozen peas and cook for another couple of minutes or so. You may also add a little olive oil if desired, but you must count it separately — I did not include it in the nutrition ingredients. Makes 8 servings, 1 cup each.
