In the mood for some classic Lo Mein? This dish is a great Lenten adaptation.
Vegan Vegetable Lo Mein
Ingredients
Lo Mein Sauce
- 3 tbsp soy sauce
- 1 1/2 tbsp water
- 1/2 tsp rice vinegar
- 1/2 tsp honey
- 2 tsp sesame oil
- 1 tsp maple syrup
- pinch white pepper
- 1 tsp sweet chili pepper sauce or red pepper or chili paste to taste
Wok Ingredients
- 2 tbsp oil
- 1/2 onion thinly sliced
- 1 cup matchstick carrot
- 1 sweet bell pepper julienned
- 1 cup snow peas
- 3 cloves garlic minced
- 1 tsp ginger optional
- 4 oz soba noodles
Garnish
- sesame seeds
Instructions
- Cook noodles according to package directions
- Mix together sauce ingredients
- Prepare all vegetables
- Sauté vegetables until softened
- Pour noodles and sauce into cooked veggies
- Mix together, sprinkle with sesame seeds and enjoy!
