In the mood for some classic Lo Mein? This dish is a great Lenten adaptation.

Vegan Vegetable Lo Mein

Course: Main Dish

Ingredients

Lo Mein Sauce

  • 3 tbsp soy sauce
  • 1 1/2 tbsp water
  • 1/2 tsp rice vinegar
  • 1/2 tsp honey
  • 2 tsp sesame oil
  • 1 tsp maple syrup
  • pinch white pepper
  • 1 tsp sweet chili pepper sauce or red pepper or chili paste to taste

Wok Ingredients

  • 2 tbsp oil
  • 1/2 onion thinly sliced
  • 1 cup matchstick carrot
  • 1 sweet bell pepper julienned
  • 1 cup snow peas
  • 3 cloves garlic minced
  • 1 tsp ginger optional
  • 4 oz soba noodles

Garnish

  • sesame seeds

Instructions

  • Cook noodles according to package directions
  • Mix together sauce ingredients
  • Prepare all vegetables
  • Sauté vegetables until softened
  • Pour noodles and sauce into cooked veggies
  • Mix together, sprinkle with sesame seeds and enjoy!
