A great recipe for lunches!
Feel free to add shrimp or some other shellfish to make this a seafood paella! Also – if you don’t like one of the veggies – feel free to substitute another. Just keep the overall quantity the same. For a gluten-free recipe – make sure that the rice is not enriched and is specified gluten-free.
This dish works well for pot-lucks, as it can be served warm or at room temperature.
Pierogies from scratch! Use your imagination or the filling. Tofu sour cream? Jalepeno flavor? Salsa? or perhaps the traditional potato onion filling!

Pasta (ziti, penne, rotelle, etc.) Garlic Onions Oil Diced Tomatoes Fresh Basil Salt and Pepper to taste

Rice stick noodles are white and translucent and have a very delicate flavor and texture, making them perfect for soaking up whatever flavors they’re mixed with. Look for them in the Asian-foods section of the supermarket.
