Zesty Cauliflower "Rice"
Servings: 4 cups
Ingredients
- 1 small cauliflower head chopped
- 1 shallot minced
- 1 tbsp canola oil
- 3 tbsp pine nuts toasted
- 3 tbsp chopped fresh parsley
- 1 tbsp orange zest
- 1/2 cup raisins
Instructions
- In food processor, pulse cauliflower into pea-sized pieces. In skillet, cook shallot in oil over medium – high, three minutes. And cauliflower; cook, stirring often, until warm, four minutes. Stir in remaining ingredients; season. Makes 4 cups.
