Serve this refreshing dish on some lettuce cups or with some toast.
Tuna Waldorf Salad
- 2 6-oz cans white tuna
- 3 Granny Smith apples cored
- 2 T lemon juice
- 1 C celery chopped
- 2/3 C grapes halved
- 1/3 C walnuts chopped and toasted
- 2/3 C vegan mayonnaise
- 1/2 t maple syrup
- 1 t sugar
- 3 T vegan milk
- Mix chopped apples and lemon juice.
- Drain tuna. Add celery, grapes, walnuts and tuna to apple mixture. Mix gently.
- In separate bowl, mix mayonnaise, milk, maple syrup and sugar.
- Add to tuna mixture and gently combine until coated.
