Roasted Fingerling Potatoes

Servings: 3-5, depending on serving size

You can make this for as many people as you want. Just season to taste – and enjoy!


About 15 fingerling potatoes
1 T oil (olive oil, if oil day)
Cooking Spray
Seasoning to taste
Option One: Garlic, Italian herbs, Onion Powder / flakes, pinch of salt
Option Two: 1/4 to 1/2 t Garam Masala, 1/2 to 1 t chili powder, pinch of tumeric powder, pinch of salt


Preheat oven to 425° F.
Line baking sheet or cookie pan with foil. Spray foil with cooking spray.
Slice potatoes in half, lengthwise.
Toss potatoes in oil and add seasonings to taste (suggested blends above – but you can use whatever flavor you want)
Place potatoes flat side down on the baking sheet.
Bake for 15-20 minutes or until tender.
