Fresh Pepper Salad

  • 1 large red pepper
  • 1 large green pepper
  • 1 large yellow pepper
  • 2 large sticks celery finely chopped
  • 1/4 cup broken walnuts optional
  • 1 small bunch watercress, coriander or flat-leaved parsley the main stems broken off
  • sea salt and freshly group black pepper
  • 4 tbsp olive oil avoid olive oil if strict fast day
  • juice from 1 lemon
  • 1 tbsp soy yogurt optional


  • Seed and core the peppers and slice them in rings. Arrange them in a pattern around the edge of a serving dish. Mix together the celery, walnuts and watercress and pile them in the middle of the dish. Mix the salt, pepper, olive oil, lemon juice and yogurt, if you are using it, and dribble over the salad.
