For the dressing

  • 3 tbsp balsalmic vinegar
  • 3 tbsp maple syrup
  • 3 tbsp extra-virgin olive oil omit or use different oil for strict fast days
  • pinch salt

For the salad

  • 1 head red leaf lettuce washed and torn
  • 1/2 cup pecans toasted, in pieces
  • 1/2 cup cranberries dried


  • In a large serving bowl, whisk together the dressing ingredients. Add the lettuce and then toss. Sprinkle on the pecan pieces and dried cranberries. Serve immediately.
