Egg cheese – Hrudka

This slightly sweet “cheese” is often used in Pascha baskets to remind us to be moderate in all things. It is wonderful when spread on kulich or pascha bread!

  • 12 eggs
  • 1 quart milk whole
  • 1 tsp salt
  • 1/2 tsp vanilla
  • 4 tbsp sugar
  1. Beat eggs. Add milk, sugar and vanilla and beat well. Cook in double boiler until the mixture curds and only water remains. Pour into a cloth sack or a sack made of cheese cloth and tie tightly. Place on flat surface and add weight on top for several hours for a loaf type, or hang up to drain for a round shape (at least 2 hours). Carefully remove cheese from cheesecloth and refrigerate.
