A lenten, vegan cake
This recipe makes a 9″x9″ square cake. For Coffee Hour I make the recipe double and bake in a 9″x13″ pan, but the cake is somewhat deeper. You could make two squares with a double recipe.
This is a simple cake. Make sure the tea prepared is very strong; you can also try using various herbal fruit teas. Regarding the flour at the end, you want to add just enough so the batter is thick, but still pours into the baking pan.
This cake recipe works great for layer cakes and for decorated cakes. People always say they can’t tell it is vegan!
