Zesty Cauliflower "Rice"

cauliflower head

shallot

canola oil

pine nuts
toasted

chopped fresh parsley

orange zest

Instructions
In food processor, pulse cauliflower into pea-sized pieces. In skillet, cook shallot in oil over medium – high, three minutes. And cauliflower; cook, stirring often, until warm, four minutes. Stir in remaining ingredients; season. Makes 4 cups.
