Zesty Cauliflower “Rice”

This gluten-free, low-carb and low-calorie side dish is tasty and filling.

Zesty Cauliflower "Rice"
Course: Side Dish
Servings: 4 cups
Ingredients
  • 1 small cauliflower head chopped
  • 1 shallot minced
  • 1 tbsp canola oil
  • 3 tbsp pine nuts toasted
  • 3 tbsp chopped fresh parsley
  • 1 tbsp orange zest
  • 1/2 cup raisins
Instructions
  1. In food processor, pulse cauliflower into pea-sized pieces. In skillet, cook shallot in oil over medium – high, three minutes. And cauliflower; cook, stirring often, until warm, four minutes. Stir in remaining ingredients; season. Makes 4 cups.
