Serve this refreshing dish on some lettuce cups or with some toast.
Tuna Waldorf Salad
Course: Fish Allowed, Main Dish, Salad
- 2 6-oz cans white tuna
- 3 Granny Smith apples cored
- 2 T lemon juice
- 1 C celery chopped
- 2/3 C grapes halved
- 1/3 C walnuts chopped and toasted
- 2/3 C vegan mayonnaise
- 1/2 t maple syrup
- 1 t sugar
- 3 T vegan milk
Mix chopped apples and lemon juice.
Drain tuna. Add celery, grapes, walnuts and tuna to apple mixture. Mix gently.
In separate bowl, mix mayonnaise, milk, maple syrup and sugar.
Add to tuna mixture and gently combine until coated.
